What a HOT summer! Stay "cool" while making meals!
The last thing I want to be doing is cooking in a HOT kitchen, and I'm sure you would agree!
Here is an example that I hope will give you a few tips on how to alleviate this dilemma:
Yesterday late afternoon we put the BBQ in a shady spot, threw on some baby back ribs and corn on the cob...and checked it periodically. Dinner was delicious!!
Today we're using the leftovers to make BBQ pork sandwiches with a "spiced up" sauce...(no heat involved :)
Tomorrow morning while it's still cool we will steam fresh mixed vegetables in our rice cooker/steamer, grab our corn tortillas, place our quickly fried scrambled eggs down, top it with the mix, some picante sauce & cheese, roll them up and stick them in the microwave for 45 seconds. Voila, breakfast will be served!
Eat lots of fresh fruits and vegetables, and make sure to make a few meals out of one "hotly cooked" dish. (Using your rice steamer or crockpot also allows you to stay away from the "heat")
